In a large saucepan, preferably stainless steel or copper, combine all the ingredients, reserving only one tablespoon of sugar
Let it simmer slowly until it reaches the desired temperature
Light a burner and carefully flambé the liquid
Next, sprinkle with the reserved sugar
After 15 seconds, cover the saucepan to extinguish the flame
Serve hot in small cups, adding raisins and allspice berries to each cup.
