Peel the banana and cut it into 2cm pieces
Melt the butter in a saucepan
Add the bananas and cook for about 5 minutes, stirring frequently
Remove from heat and mash the bananas well
Add 1 1/2 cups of water and bring to a simmer again
Cook over low heat for about 2-3 minutes, stirring constantly
Mix in the sugar with the remaining water
Add it to the bananas
Let it come to a boil and cook slowly for about 15 minutes over low heat or until thickened
Stir frequently, taking care not to stick to the bottom
Remove from heat and stir in the vanilla extract
If there's excess butter, drain it off
Serve in a bowl and sprinkle with ground cardamom and chopped nuts
Serves 16-20 people
Note: If you can't find cardamom, substitute with cinnamon powder.
