1 cup of roasted and chopped eggplant, seasoned with salt and pepper
1/2 cup of diced tomatoes (without skins)
1/4 cup of chopped green onion
1/2 teaspoon of chopped fresh parsley
1/2 pound of high-quality ground beef
salt and pepper to taste
1 tablespoon of butter or margarine
4 hamburger buns, cut in half, toasted, and buttered

Mix the eggplant, tomatoes, green onion, and parsley in a small bowl, cover, and refrigerate until ready to use
Gently mix the ground beef with salt and pepper
Form 4 equal-sized patties
Pan-fry the burgers in butter or margarine until desired level of doneness
Place the burger on each bun half, top with a spoonful of the eggplant mixture, and season with additional green onion if desired
Top with the other half of the bun and garnish with olives and red pepper flakes, if desired
