In a medium bowl, mix the pork loin, salt, and vinegar. Reserve
In a medium skillet over medium heat, cook the onion and thyme in olive oil until the onion is soft (about 2 minutes)
Add the reserved pork mixture and cook, stirring constantly, until it loses its pink color (about 3 minutes)
Transfer to a bowl
Mix in the bread crumbs until well combined
Divide into six portions
Grease a surface with butter
Using a cookie cutter or shaping by hand, form a patty from each portion
Reserve on a greased surface
Heat a large skillet or griddle over high heat
Grease with butter and reduce heat to medium
Fry two patties at a time until golden brown (about 2 minutes per side)
Arrange the patties on a plate and top each with a pineapple ring. Reserve
Heat the oven to 200°C (hot)
Prepare the sauce: in a medium saucepan, combine all ingredients and mix well
Cook over high heat, stirring constantly, until thickened slightly (about 5 minutes)
Pour over the pineapple rings
Bake in the preheated oven for about 10 minutes
Garnish with green onion stalks
Serve immediately
