Two-thirds cup of raw almonds
Three-quarters cup of cooked soybeans
One-half cup of finely chopped onion
One-quarter cup of grated carrot
Two-thirds cup of mashed sweet potatoes
One lightly beaten egg
One-fourth teaspoon of paprika
One-half teaspoon of salt
One clove of garlic, minced or crushed
One tablespoon of chopped fresh parsley
One-fourth cup of panko breadcrumbs

In a food processor, combine the almonds, soybeans, onion, and carrot
Process until well combined
Add the egg, seasonings, and one-eighth cup of panko breadcrumbs
Process until just combined
Add the mashed sweet potatoes and process until well combined
If necessary, add more panko breadcrumbs to bind the mixture
If too sticky, refrigerate for 10 minutes
Divide the mixture into 6 portions, coat each with flour, and shape into burgers
Fry in hot oil until golden brown
Serve with tomato or mustard sauce
Yield: 6 soy burgers.
