1/2 cup cooked green beans (50 g)
1 small zucchini (180 g), diced
1 medium sweet potato, peeled and grated (120 g)
2 tablespoons chopped parsley
1/4 teaspoon salt
1 egg
1/2 cup whole wheat breadcrumbs (45 g)
1/4 cup grated Parmesan cheese (30 g)
Oil for brushing

Mix all ingredients together in a medium bowl until well combined
Divide into four portions
Brush the surface with oil
Using a cookie cutter or shaping with your hands, form each portion into a hamburger patty
Reserve on a prepared surface
Heat a large skillet or griddle over high heat
Brush with oil and reduce heat to medium
Fry two hamburger patties at a time until golden brown (approximately 2 minutes per side)
Arrange on a platter and serve immediately
