Mix the well-drained black beans with the chopped green pepper, onion, salt, and pepper
Spread 3 or 4 tablespoons of black bean mixture over 8 slices of bread
Cover each slice with 1/4 cup of shredded Cheddar cheese
Place the remaining slices, spreading butter
Fry the green pepper rings for 3 minutes
Bake the sandwiches until they are golden brown
Serve and garnish with the fried green pepper rings
Serve 8 per person.
