Place all the meats, except leek, into a pot
Cover with plenty of cold water
Let it boil up, then reduce heat and let it cook; after 30 minutes, season to taste and add 12 grams of pepper, carrots, white parts of garlic shoots, diced, onions speared with 2 crabs, garlic cloves without peeling
Let it cook for another hour
Add turnips, cabbage cut into two pieces, briefly blanched in water for 5 minutes
Add salsify
After 30 minutes or so, add green beans, leek diced and pork ears

In separate, cook potatoes in seasoned water with salt
Serve the stew hot and unthickened in a tureen, accompanied by grated cheese and toasted bread
Serve the meats cut into a platter and vegetables onto another.
