1 liter of whole milk
3 tablespoons of natural yogurt at room temperature
1 liter of whole milk
3 tablespoons of natural yogurt at room temperature
Warm the milk until it's hot but not boiling
Let it cool
Remove any skin that has formed on the surface
In a small bowl, mix the yogurt until it's smooth
Add 1/3 cup of warm milk and mix well
Pour into a pan with the remaining milk and mix well
Transfer to a container with a capacity for 1.5 liters
Cover or seal
Let it rest in a draft-free area, like an oven set at 150°F (65°C), for 3 hours
After 3 hours, stir to check if it's firm
If not, let it rest for another hour
As it starts to thicken, refrigerate and let it chill for 6 hours before serving
