Place the chopped bacon, whole wheat breadcrumbs, scallions, parsley, lime zest, egg white, and black pepper in a blender
Blend until a homogeneous mass forms
Divide the mass into 8 equal portions
Assemble the skewers: soak 8 large churrasco sticks in water and shape each one with a portion of the mass in the center
Dust the koftas with paprika and bake in a medium preheated oven for approximately 15 minutes, flipping the skewers halfway through
Serve with white rice.
