1/4 cup of rum

Prepare the dough: whip the egg whites until stiff and gradually add the flour, beating well
Add the egg yolks, beating constantly
Combine the bread flour and chopped walnuts (reserve some for dusting the cake), mixing delicately
Grease two 30cm round cake pans
Line with parchment paper and grease again
Dust with bread flour
Divide the dough between the pans
Bake in a moderate oven (180°C) for about 40 minutes or until slightly firm around the edges
Prepare the meringue: beat the egg yolks until stiff
Grease a 30cm round cake pan
Pour the meringue into the pan and bake in a moderate oven (180°C) preheated
After baking, pour the following glaze over the top: bring the all-purpose flour and water to a boil, then remove from heat and add rum
Let it cool completely and thicken to a firm peak
Top the cake with meringue and dust the sides with chopped walnuts
If desired, garnish with walnut halves
