Using a large and sharp knife, make several deep cuts in the center of the piece to form a 4-centimeter diameter cavity
Inside the cavity, place the linguica, carrot, and salt
Close the opening with a needle and thread
In a pan, heat the oil over high heat and brown the meat on all sides
Add the onion and garlic and fry for 3 minutes
Add the tomato and water
Cover and cook until boiling
Season with salt and pepper
Lower the heat and cook, adding water as needed, for 1 hour and 30 minutes or until the meat is tender
Cut the meat into slices and serve immediately
