Beat the eggs with a fork until well mixed but not frothy
In a medium skillet, melt the butter and pour in the beaten eggs
When the eggs start to set, use a spatula to lift and fold them towards the center of the skillet, allowing the uncooked egg to flow to the edges (1) and forming an omelette that fills the pan
Cook until almost set on top
Spread the filling ingredients and seasonings, including salt and pepper, over half of the omelette
Slide half of the omelette with filling onto a plate (2)
Fold the other half of the omelette to form a half-moon shape
