2.5 kg of cooked lobster tails
4 tablespoons of butter
7 tablespoons of all-purpose flour
2 1/2 cups of milk
Salt and white pepper to taste
1 cup of heavy cream
1 1/2 cups of grated cheddar cheese or suave ralado
3 egg yolks, lightly beaten
1 cup of sliced mushrooms
2.5 kg of cooked lobster tails

Remove the lobster meat from the shells
Cut the meat into bite-sized pieces
Arrange in a refrigerator-proof dish. Reserve
In a medium saucepan, melt the butter
Add the flour and whisk well
Remove from heat and add milk
Whisk until smooth and season with salt and pepper
Heat over medium heat, whisking constantly to thicken slightly
Add heavy cream, grated cheese, egg yolks, and mushrooms
Simmer, whisking occasionally, until the sauce reaches a boil
Cover the lobster meat with the prepared sauce
Bake in a preheated oven at 200°C (or grill) until golden brown
Dish out into 8 portions
