1 cooked lobster of 700g
3 large mushrooms, sliced
5 tablespoons of butter
1 teaspoon of sweet paprika
1/2 tablespoon of mustard
1 tablespoon of chopped parsley
1/4 cup of sherry
2 tablespoons of all-purpose flour
1 cup of heavy cream
1/2 teaspoon of salt
2 tablespoons of grated Parmesan cheese

Divide the lobster in half and remove the meat
Cut it into small pieces
Set aside
Cook the mushrooms in 3 tablespoons of butter, then add sweet paprika, mustard, parsley, and sherry
Bring to a boil and reserve
In a pan, melt the remaining butter, mix with flour, add heavy cream, and cook until thickened, stirring constantly
Season
Add the mushrooms and lobster
Fill the lobster shell with this mixture, sprinkle with Parmesan cheese, and bake in a hot oven (250°F) for 15 to 20 minutes
Serve immediately.
