2 tablespoons of olive oil
1 small onion finely chopped
1 clove of garlic minced
1 tomato, peeled and seeded, finely chopped
1 cooked chicken breast, cut into cubes
Salt and pepper to taste
1/2 cup of cream cheese
2 tablespoons of heavy cream
1 tablespoon of chopped fresh cilantro
2 cups of cooked spinach, chopped
16 slices of white bread
2 tablespoons of olive oil

In a skillet, heat 1 tablespoon of olive oil and sauté the onion and garlic until softened
Add the tomato, chicken, salt, and pepper
Cook for 3 minutes
Stir in the cream cheese, heavy cream, and cilantro
Remove from heat. Reserve
In another skillet, heat the remaining olive oil and wilt the spinach until it's tender
Season with salt to taste
Set aside
Brush each slice of bread with a little olive oil and grill until toasted
Assemble the sandwiches by alternating layers of chicken, spinach, and bread.
