2 tablespoons of olive oil
1 1/4 cup of water
1 tablespoon of grated ginger
1 clove of garlic
1 chicken (1 1/2 to 2 kg) cut into serving pieces
1 cup of soy sauce
1/2 cup of sake
2 tablespoons of dry sherry wine
2 tablespoons of cornstarch
2 tablespoons of olive oil
1 1/4 cup of water
1 tablespoon of grated ginger

2 tablespoons of cornstarch
Heat the olive oil in a large pot
Add the ginger, garlic and chicken pieces
Coat them evenly
Add 1 cup of water and remaining ingredients except for the cornstarch
Simmer slowly for 40 minutes
Remove the chicken to a serving dish
Mix the cornstarch with 1/4 cup of water
Add it to the remaining sauce in the pot
Simmer, stirring constantly, until the mixture thickens
Pour the sauce over the chicken.
