1/4 cup of mustard
2 tablespoons of white wine vinegar
1 tablespoon of sugar
1 teaspoon of whole-grain mustard
1/3 cup of olive oil
1/4 cup of fresh dill
4 cups of coarsely grated cabbage
2 cooked beets, sliced (500g)
1 small cucumber, thinly sliced
2 tomatoes, halved
200g of smoked salmon fillets
Salt to taste

In a bowl, combine the first four ingredients and set aside
Slowly add the olive oil while whisking continuously
Add the chopped fresh dill and season the dressing with salt
Spread the cabbage on a large plate and arrange the sliced beets around the plate
Place the cucumber and tomato in the center
Top with the smoked salmon fillets
Season with a little of the dressing and serve the rest on the side
