2 large potatoes, peeled and cut into small cubes
beef broth made with bouillon cubes
1/2 cup butter or margarine
2 tablespoons freshly squeezed lemon juice
salt and pepper to taste
1 tablespoon chopped parsley

Cook the potatoes in beef broth until they're tender
Drain
Mash the butter or margarine
Add the lemon juice and mash again
Season to taste
Combine with the potatoes, mix well, and simmer over low heat for 5 minutes
To serve, sprinkle with parsley.
