1 small pineapple, chilled
1 cup of cooked prosciutto, cut into cubes
1/2 cup of finely chopped green onion (scallion)
1 tablespoon of green pepper, finely chopped
1/4 cup of mayonnaise
1 teaspoon of mustard

Cut the pineapple in half lengthwise
Remove the pulp from both halves, being careful not to puncture the skin
Also remove the tough core and cut the remaining pulp into small cubes
Mix 1 cup of pineapple cubes with the prosciutto, green onion, and green pepper
(Use the remaining pineapple for a fruit salad the next day.) Mix the mayonnaise with the mustard, add to the prosciutto, and mix well
Fill the pineapple halves with this mixture.
