Ingredients
4 chicken broth tablets
2 liters of water
3 medium beetroots
1/4 cup of vinegar
2 soup spoons of lemon juice
1 cup of creamy ricotta cheese
2 soup spoons of grated lime zest
Dried and seasoned crackers to taste

Preparation

In a pot, dissolve the chicken broth tablets in water
Add the beetroot and cook for 30 minutes, starting from when the water starts boiling
Remove the beetroot, peel it, and blend it with some of the cooking liquid in a blender

Combine the vinegar and lemon juice, and mix well
Let it cool and refrigerate for at least an hour
Before serving, add a spoonful of ricotta cheese and sprinkle with lime zest and crackers
