In a large pot, heat one tablespoon of oil and sauté the garlic until golden
Add the agria and season with salt
Cook for two minutes over low heat
Remove from heat and set aside

In the same pot, add the remaining oil and sauté the onion until softened
Add the sweet potato and gradually stir in the vegetable broth
Simmer over low heat until the sweet potato is tender

Let it cool slightly and puree in a blender until smooth
