8 large sour oranges
1 1/3 cup of sugar
2 tablespoons of cognac
2 tablespoons of flavorless gelatin
1/2 cup of cold water

Cut off one-quarter of the orange from the top
Trim the edges if desired
Remove the pulp and place it in a bowl
Arrange the oranges on a platter
Squeeze the pulp and strain it until you get 3 cups of juice, adding more as needed
Combine the sugar and cognac with the orange juice and mix well
Sprinkle the gelatin over cold water in a small saucepan, place it over low heat, and stir constantly until the gelatin is dissolved
Pour the gelatin mixture into a bowl and add the orange juice mixture, stirring slowly
Add 3/4 cup of heavy cream, mix well, and distribute this mixture among the orange shells
Refrigerate until firm
Just before serving, whip the remaining heavy cream and garnish the oranges with it
Sprinkle with grated semi-sweet chocolate
Serve 8 portions.
