1 cup of tomato sauce
1 chopped onion
1/4 teaspoon of chopped parsley
1/4 teaspoon of dried oregano
1 cup of ricotta cheese
1/2 cup of grated mozzarella cheese
1 tablespoon of fresh basil leaves
3 zucchinis
1 tomato, cut into slices
2 tablespoons of grated Parmesan cheese
Salt to taste
1 cup of tomato sauce

Salt to taste
Combine tomato sauce, onion, parsley, salt, and oregano
Set aside
In a bowl, mix ricotta cheese, mozzarella cheese, and basil leaves
Set aside
Peel the zucchini and cut it into horizontal slices
Arrange the slices in a dish and cover with plastic wrap
Microwave on high for 6-8 minutes, or until the zucchini is tender
Flip the zucchini halfway through cooking
Place the slices on paper towels to remove excess moisture
In a greased dish, create a layer of half the zucchini, followed by ricotta cheese mixture
Top with sliced tomato and half of the remaining tomato sauce
Create another layer with the remaining zucchini and tomato sauce
Sprinkle Parmesan cheese and microwave until the center is warm.
