1 x cup of grated zucchini, fine ralation

1 cup all-purpose flour
1/2 cup butter or margarine
1 egg, beaten
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon nutmeg
1 cup chopped hazelnuts or cashews
1 cup raisins

Beat the butter or margarine with the all-purpose flour, add the grated zucchini and baking soda, and beat well
Add the egg and beat well
Sift together the remaining all-purpose flour, ground cinnamon, ground cloves, and nutmeg, and add them to the egg mixture along with the chopped hazelnuts or cashews and raisins
Drop spoonfuls of the dough into a greased muffin tin and bake in a moderate oven (170°C) for 12-15 minutes
Let cool for about 3 days before serving.
