Cut the green tomatoes into small cubes
Remove the honey seeds and cut into cube form
Mix the tomatoes, honey, lime, and sugar
Let it rest in the refrigerator for 2 days
Place in a saucepan, preferably with an airtight lid, and bring to a low heat
When it starts to boil, reduce the heat and carefully remove the foam that forms on the surface, using a skimmer
Let it cook until the syrup reaches a soft-ball stage
Transfer to sterilized glass jars
Let it cool and seal tightly
Make 2 small jelly jars
