Separate the pear skins and flesh
Cut the pear flesh into pieces and mix well with lemon juice syrup so it doesn't darken
In a pot, bring the broth to a boil
When boiling, add the pear skins and flesh to cook for 10 minutes
Cool and let it warm down
Mix the liquid with raw pears
Blend in a blender
Season with salt and black pepper and refrigerate for 2 hours
Serve as an appetizer, adding 1/2 tablespoon of gorgonzola cheese to each serving.
