1 small eggplant, finely chopped

1 large onion and 1 green pepper

Mash in 2 cloves of garlic, season with salt and pepper to taste
Bring to a boil, cover and let the liquid evaporate slowly
Remove the lid and let cook slowly until all the liquid has evaporated
Serve hot or cold.
