Clean and cut the beef rump roast in half lengthwise and place it in a deep bowl with the following marinade:
1 cup of vinegar
1 cup of white wine
lemon juice from 1 lemon
black pepper
green pepper, crushed
salt, garlic, and parsley
2 sprigs of rosemary
1 finely chopped onion

Leave the beef rump roast in these marinades for a day or two
Bake it in the oven with fat and all the marinade that soaked into it
While baking, brush it with the proper sauce
A little before it's done, mist it with cold water and poke it with a fork
Bake it again to get the skin nicely browned
After cooking, arrange the beef rump roast on lettuce leaves and serve the sauce separately.
