1 tablespoon of curry powder (or to taste)

1 cup of evaporated milk

Wash the lentils and cook them in salted water for 40 minutes
Drain
Heat the oil, add the chopped onion and sauté until golden brown
Mince the white part of the parsley and add to the onion
Sprinkle with curry powder

Cook over low heat for 20 minutes
Add the lentils
Let it cook for 5 minutes
Add evaporated milk and season with salt, lemon juice, and a pinch of salt to taste
Serve in a dish garnished with tomato wedges and parsley
Serve with pork, potatoes, or rice
