Fry the onion in butter
Add the eggplant, zucchini, and cook until they are tender
Drain the liquid that formed and season with salt
Set aside
Mix the ricotta, milk, and curry powder to obtain a creamy paste
Add the grated carrot and cooked vegetables, stir, and adjust the salt
Build the sandwich as before.
