Wash the spinach thoroughly and remove any stems or leaves
Rinse well
Drain excess water from the spinach
Chop the spinach into smaller pieces
Heat the olive oil in a skillet with the minced garlic until it starts to brown
Add the chopped spinach, season with salt and pepper, and stir until wilted
Stir occasionally until the liquid has evaporated
Then, transfer the spinach mixture to a baking dish
Beat the eggs in a bowl
Pour the egg mixture evenly over the spinach
Drizzle with a little olive oil
Bake in a preheated oven at 400°F (200°C) for 10 minutes
Serve as an accompaniment to meats or fish
