Put the wheat in a bowl and add hot water
Let it rest for 15 minutes
Drain well and reserve
Heat the olive oil and sauté the minced garlic
Add the chopped scallions and cook for one minute
Add the diced linguiça and tomato
Mix and season with salt to taste
Cook until the linguiça is tender
If necessary, add more hot water
Remove from heat and put in the reserved wheat
Check the salt, sprinkle with chopped parsley, and cover the pan
