Cut the pork loin in half and open it up, then cut along both sides to form a large rectangle
Mash it around a bit, season with salt and lime juice about 2 hours before cooking

Serve the pork with cornmeal and white rice farofa and arroz branco
To make the farofa, sauté the cornmeal and add mandioca flour until the mixture is quite loose
