Season the pork chop with salt, black pepper, and garlic
Wrap it tightly in plastic wrap and refrigerate for at least a day
Preheat your oven to 200°C (400°F)
Remove the pork from the refrigerator and place it on a baking sheet lined with olive oil
Make sure the fatty side is facing up
Cover the pork with aluminum foil and bake for 40 minutes
Remove the foil and if necessary, add a little water to create a gravy
Baste the pork with its own juices every 10-15 minutes until it's cooked to your desired level of doneness
