In a saucepan, combine the red wine, vinegar, olive oil, and spices
Let it simmer and cook, stirring occasionally, until the olive oil has dissolved
Add the sliced onions and let them cook for about 15 minutes, or until they're soft and tender
While the onions are cooking, prepare the sardines
Wrap the fillets in a sheet of parchment paper
Pour the liquid with the onions over the sardine rolls
Close the jar tightly
Refrigerate it for a few days to allow it to cure before serving
Serve as an appetizer.
