Score the pork loin evenly and place slices of garlic, sprigs of thyme, and sprigs of rosemary inside the slits
Season with salt and pepper to taste and place in a small roasting pan with some water
Roast in a preheated moderate oven (170°C) until the water has evaporated completely and the pork is golden brown
Serve hot or cold, cut into slices
If desired, serve with a gravy
To make the gravy, return the pan to the heat, add a little hot water, and scrape up any browned bits with a wooden spoon, stirring well
Serve with the roasted pork.
