Heat a large skillet with olive oil over high heat for 3 minutes, then sauté the onions and garlic until softened
Add the seasoned maminha and cook until nicely browned on all sides
Add the tomatoes, bell pepper, and thyme
Simmer for 10 minutes, stirring occasionally
Cover the skillet, reduce the heat, and cook while adding a little water at a time to leave the meat tender and create a rich sauce
Let it cool and slice into portions
Serve with 8-10 pieces.
