1 1/2 kg of pork loin

5 ripe bananas (Nanica or Prata varieties) or 3 large ripe bananas

1/4 cup vinegar

Preheat the oven to moderate temperature (350°F)
Clean and season the pork loin with garlic, salt, and black pepper
Bake in the preheated oven for approximately 2 hours or until the meat is tender, basting with water to prevent drying out
For the glaze: combine all ingredients in a saucepan, bring to a simmer over medium heat, stirring constantly, until thickened like a heavy cream
Remove from heat
Place the roasted pork loin on a platter and serve with the glaze
