Season the pork loin with salt and peppercorn
Mix the mustard with the black pepper and brush this paste all over the meat
In a large skillet, melt the butter and brown the meat
Transfer to a baking dish and drizzle with the remaining liquid from the skillet and add beer
Place in the oven, covered with aluminum foil, at medium heat for about an hour
Remove the foil and let it brown for another 10 minutes
If necessary, add hot water gradually during the time the meat is in the oven to prevent burning.
