1 kg pork loin, cut into 2.5 cm cubes

In a large skillet, fry the pork loin in olive oil over high heat, stirring constantly, for 5 minutes or until it loses its pink color
Add half of the wine, cumin, garlic, salt, and black pepper
Cover and simmer over low heat for 45 minutes or until the pork is tender
Add the remaining wine and coriander, without covering, and simmer for about 5 minutes
Transfer to a serving dish and serve immediately.
