1 chicken breast cut into pieces, thighs and 4 drumsticks
2 tablespoons of lime juice
1/4 cup of dendê oil
1 large onion, chopped
1 cup of coconut milk
1/3 cup of toasted almond flakes
1 tablespoon of grated ginger
1/3 cup of roasted cashews
2 tablespoons of chopped cilantro
Salt to taste

Season the chicken with salt and lime juice
Set aside
Combine dendê oil and onion in a microwave-safe dish and cook on high for 5 minutes
Add the chicken, coconut milk, almonds, ginger, and cashews
Mix well and microwave on high for 40 minutes, stirring occasionally
Serve with white rice, if desired
