Cooked salted cod (1/2 kg)
Fresh parsley
One large garlic clove
1/4 cup of olive oil
Chopped onion
One tablespoon of butter or margarine
One cup of tomato puree
TWO red bell peppers, diced
ONE green bell pepper, diced
Cooked salted cod (1/2 kg)

Soak the cod in water, changing the water several times
Drain and place in a saucepan
Cover with fresh water and add a handful of parsley
Cook until tender
Drain and reserve the cooking liquid
Mash the garlic clove and fry in olive oil until golden
Remove the garlic
Cube the cod into small pieces
Briefly sauté the cod in the garlic-infused oil
While doing this, caramelize the onion in butter or margarine until it's soft
Add the tomato puree, one cup of the reserved fish cooking liquid, the diced red bell peppers, and, if desired, a few chopped olives
Let it simmer for about 10 minutes
Serve 4 to 6 portions
