500 g of pork tenderloin

2 tablespoons of light soy sauce
1 tablespoon of vinegar
1 cup of pineapple juice
400 g of tofu (soy cheese)
1 teaspoon of light margarine

Remove any visible fat from the pork tenderloin and cut it into thin slices. Reserve
Mix together the ginger, garlic, light soy sauce, and vinegar
Place the pork in this marinade and mix well
Let it rest for two hours
Add pineapple juice and let it rest for another 30 minutes
Cube the tofu and reserve
Drain the meat, save the marinade, and reserve it
In a non-stick skillet, sauté the pork slices until they're cooked through
On the side, melt the margarine and fry the tofu for two minutes
Heat the marinade and place in a baking dish the pork and tofu, and drizzle with sauce
Serve with chopped fresh parsley.
