2 tablespoons of dark brown sugar
2 tablespoons of cornstarch
500g pork loin cut into thin strips
One large onion, cut into rings
2 cloves of garlic, crushed
1 tablespoon of olive oil
2 tablespoons of soy sauce
4 tablespoons of vinegar
2 carrots, cut into sticks
1 can of pineapple juice (450g), drained and cut into chunks
1 green bell pepper, cut into strips

Mix together the brown sugar and cornstarch in a bowl
Cover the pork loin with this mixture, making sure it's evenly coated
Season with salt and black pepper
In another bowl, mix together the onion, garlic, and olive oil
Microwave on high for 5-7 minutes or until they're soft
Combine the pork loin with the cornstarch mixture in the bowl with the onion mixture
Add the soy sauce, vinegar, carrots, pineapple juice, and green bell pepper
Partially cover the bowl and cook on high for 12-15 minutes or until the pork is cooked through
Add the remaining pineapple chunks and green bell pepper strips
Cook without covering for an additional 5 minutes
Serve immediately.
