2 tablespoons of lemon juice

Score the pork loin and reserve
Blend the remaining ingredients in a blender
Place the pork loin in a roasting pan and season with the blended mixture
Cover with aluminum foil and place in a preheated oven at 400°F for 30 minutes
While the meat is cooking, add 1/2 cup of water to create a bit of gravy
Check if it's cooked and tender, spearing with a fork
If so, don't drain the liquid and the fork will slide in easily
Remove the aluminum foil, flip the pork loin, and roast until golden brown
Continue adding water as needed to prevent drying out
Cut into slices and serve with the roasting pan gravy
