4 medium-sized potatoes (480 g), cut into 1 cm thick slices
1 cup water (240 ml)
1/4 cup vinegar (60 ml)

2 cups fresh thyme leaves (110 g)

Season the pork loin with the garlic and salt mixture
Set aside
Arrange the potatoes in a medium-sized baking dish and place the pork loin on top, fat side up
Mix the water with the vinegar and English BBQ sauce, and pour it over the pork loin
Cover with plastic wrap and cook in the microwave at high power until the pork is tender (approximately 45 minutes)
Remove from the microwave
Distribute the thyme leaves around the pork and drizzle with olive oil
Cover and cook in the microwave at high power until the thyme is tender (approximately 3 minutes)
Serve immediately
