In a skillet, melt the butter and sauté the onion and garlic
Add the bell pepper, tomato, and cook until tender
Cook and shred the beef, reserving the broth
Combine the cooked beef with the codfish and broth
Add the reserved broth in small increments, stirring continuously
Cover the skillet and simmer over low heat until the fish is tender
Turn off the heat and mix in the thyme and parsley.
