1 kg pork loin, cut into 2.5 cm cubes
2 tablespoons olive oil
1 and 1/4 cup white wine (300 ml)
1 and 1/2 teaspoons ground coriander
2 crushed garlic cloves
1/2 teaspoon salt
1 pinch of black pepper
2 tablespoons chopped fresh coriander
Lime wedges for serving (optional)

In a large skillet, cook the pork in olive oil over high heat, stirring constantly, until it loses its pink color (about 5 minutes)
Add half of the white wine, ground coriander, garlic, salt, and black pepper
Cover the skillet, reduce the heat, and simmer until the meat is tender (about 45 minutes)
Add the remaining white wine and chopped fresh coriander
Simmer without covering for about 5 minutes
Transfer to a serving dish and serve with lime wedges
