Place all ingredients, except the bacon, in a bowl
Let the pork loin marinate for three hours
Transfer the meat to a baking dish and arrange the bacon on top
Cover with aluminum foil and bake for two hours
Remove the foil and let the meat cook until it's nicely browned
Farofa:
Sauté the onion with half of the butter
Add the salsa and the remaining butter
Gradually add the cassava flour, mix well, and serve.
